Pizza casserole

TIP: Leave off cheese to make it paleo-compliant!

1 diced green pepper
1/2 diced red onion
3 boneless chicken breasts
1 spaghetti squash
1 tbsp virgin olive oil
14 oz pizza sauce
1 cup shredded mozzarella
Oregano to taste
Basil to taste

Preheat oven to 400 degrees and roast spaghetti squash for 40-45 minutes or until texture is how you like it…

While spaghetti squash is roasting, cook up your chicken on the stove and cut up into cubes

Mix spaghetti squash, chicken, spices, and vegetables into a big bowl.

Pour into a casserole dish and heat in the oven at 400 degrees for 10 minutes.

Sprinkle mozzarella on top and bake until cheese melts.
